Summer Fun with VIA

Some VIA recipes to try for your next BBQ!!

...I can't take credit for any of these, I think Parise might have sent these to me ages ago however I recently made the BBQ sauce again and it was yummo!

VIA chicken Marinade
2 Italian VIA
2 tsp ground coriander
2 tsp packed brown sugar
salt to taste
chicken breast

1. Mix all ingredients in bowl.

2. Add approx. 8 to 12 oz water and mix well.

3. Using a Ziploc baggies place marinade and chicken inside and marinate for a couple of hours or overnight.

4. Cook in a 350 oven for about 30 to 40 mins. serve with glaze or bbq sauce



Worcestershire-Coffee Glaze
1/3 cup light corn syrup
2 tablespoons Worcestershire sauce
2 tablespoons ketchup
1 teaspoon COLUMBIA VIA
2 teaspoons (packed) golden brown sugar
3 tablespoons butter for glaze

1. Stir first 5 ingredients in small saucepan over medium heat for about 5 mins.

2. Remove from heat. Whisk in butter.

3. Season glaze to taste with salt and pepper.



VIA BBQ Sauce
Makes 6 to 8 servings Ingredients:
2 finely chopped garlic cloves
2 tablespoons olive oil
3/4 cup balsamic vinegar
3/4 cup apple cider vinegar
1 cup ketchup
1/2 cup ITALIAN VIA, freshly made
1/4 cup dark molasses
2 tablespoons chili powder
3 tablespoons tomato paste
2 tablespoons granulated sugar

1. Sauté garlic in olive oil until just lightly browned in a medium pot. Pour vinegars into pot and cook, stirring, for 5 to 6 minutes.

2. Stir in remaining ingredients and cook for 10 minutes to blend the ingredients.

3. Remove sauce from heat and strain through a fine sieve. Serve hot or room temperature.
